Easy Baked Salmon with Vegetables

This easy baked salmon with vegetables is a perfect healthy dinner for any night of the week. The simple preparation and minimal cleanup make it ideal for busy weeknights or relaxed weekends.

Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 pound baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • Salt and pepper, to taste

Method

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the olive oil, ground cumin, ground coriander, smoked paprika, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet and brush them with the spice mixture. Arrange the baby potatoes, red bell pepper, and red onion around the salmon on the baking sheet.
  4. Drizzle any remaining spice mixture over the vegetables and toss them gently to coat.
  5. Bake in the preheated oven for 20-25 minutes, until the salmon is cooked through and the vegetables are tender.
  6. Remove from the oven and let rest for a few minutes before serving.
