Easy Baked Salmon Salad
This easy salmon salad makes for a refreshing and healthy dinner that's perfect for spring. With a hint of Thai flavors, it's sure to become a favorite weeknight meal.
Ingredients
- 4 salmon fillets, about 6 ounces each
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 teaspoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 cup snap peas
- 4 cups mixed salad greens
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, soy sauce, honey, and grated ginger.
- Place the salmon fillets on a baking sheet lined with parchment paper. Brush the soy sauce mixture over the fillets and season with salt and pepper.
- Arrange the sliced red bell pepper and snap peas around the salmon on the baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is baking, arrange the mixed salad greens on a large serving platter.
- Once the salmon and vegetables are cooked, layer them over the salad greens. Drizzle any remaining sauce from the baking sheet over the salad if desired.
