Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Olive oil, for drizzling
  • Fresh basil leaves, for garnish

Method

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Pound the chicken breasts to an even thickness. Season with salt and pepper.
  3. Place the flour, beaten eggs, and breadcrumbs mixed with Parmesan cheese, oregano, and garlic powder into separate shallow bowls.
  4. Dredge each chicken breast in the flour, then dip into the eggs, and finally coat with the breadcrumb mixture, pressing to adhere.
  5. Place the coated chicken breasts onto the prepared baking sheet. Drizzle with a little olive oil.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
  7. Remove the chicken from the oven. Spoon marinara sauce over each piece and sprinkle with mozzarella cheese.
  8. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil leaves before serving. Enjoy with pasta or a side salad.
