Curried Chicken Salad

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon curry powder
  • 1/4 cup chopped celery
  • 1/4 cup raisins
  • 1/4 cup chopped almonds
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Method

  1. In a large bowl, combine the Greek yogurt, mayonnaise, curry powder, and lemon juice. Mix well until smooth.
  2. Add the shredded chicken, celery, raisins, almonds, and cilantro to the bowl. Stir until all ingredients are thoroughly combined and coated with the dressing.
  3. Season with salt and pepper to taste, adjusting as necessary.
  4. Serve immediately on a bed of lettuce or your choice of bread, or refrigerate for 10 minutes to let flavors meld before serving.
