These crispy chicken thighs are juicy on the inside and perfectly crispy on the outside, making them a family favorite for any night of the week.
Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
Method
- Preheat the oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels to ensure the skin becomes crispy.
- In a small bowl, mix together the salt, black pepper, garlic powder, smoked paprika, and dried thyme.
- Rub the olive oil over the chicken thighs, then sprinkle the seasoning mixture evenly over both sides of the chicken, rubbing it in gently.
- Heat a large oven-safe skillet over medium-high heat. Place the chicken thighs skin-side down in the skillet.
- Cook for about 5 minutes without moving them, until the skin is golden brown and releases easily from the pan.
- Flip the chicken thighs and transfer the skillet to the preheated oven.
- Bake in the oven for 30-35 minutes, until the internal temperature reaches 165°F (74°C) and the skin is crisp.
- Remove from the oven and let rest for 5 minutes before serving.
