Creamy Weeknight Pasta

Ingredients
- 1 pound whole wheat pasta
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 cup canned coconut milk
- 1/2 cup nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 cup fresh parsley, chopped
Method
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the coconut milk and bring to a simmer. Let it cook for 3-4 minutes, allowing it to thicken slightly.
- Stir in the nutritional yeast, lemon juice, salt, and ground black pepper. Mix until well combined.
- Add the cooked pasta to the skillet and toss to coat the noodles evenly with the sauce. Cook for another 2 minutes to heat through.
- Garnish with fresh parsley and serve immediately.
