Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1 1/2 cups half-and-half
  • 8 ounces uncooked fettuccine
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Flaky sea salt, to taste
  • Ground black pepper, to taste

Method

  1. In a large skillet over medium heat, heat the olive oil. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Transfer to a plate and set aside.
  2. In the same skillet, add the garlic, dried Italian herbs, and red pepper flakes. Cook until fragrant, about 1 minute.
  3. Add the chicken broth and half-and-half to the skillet. Stir to combine and bring to a simmer.
  4. Add the fettuccine, ensuring it's submerged in the liquid. Cook according to package instructions, stirring occasionally, until pasta is al dente and the liquid has reduced and thickened.
  5. Stir in the Parmesan cheese until melted and combined. Add the spinach and cooked chicken, stirring until the spinach is wilted.
  6. Season with flaky sea salt and ground black pepper to taste. Serve hot.
