Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 1/2 cups canned chickpeas, drained and rinsed
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1 cup vegetable broth
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges, for serving

Method

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onion and sauté until it begins to soften, about 3-4 minutes.
  3. Add the minced garlic, red bell pepper, and zucchini to the skillet. Cook for another 5-6 minutes, stirring occasionally, until the vegetables are tender.

  5. Pour in the vegetable broth, season with salt and black pepper to taste, and bring the mixture to a simmer. Cook for 10-12 minutes until the broth has reduced and the flavors have melded.
