Classic Vanilla Cupcakes with Buttercream

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups powdered sugar
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Method

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with 12 liners.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream the butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, and mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  6. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow cupcakes to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  8. For the buttercream, beat the powdered sugar and butter together until smooth. Add the vanilla extract and milk, beating until the frosting is light and fluffy.
  9. Once cupcakes are completely cool, frost with buttercream and serve.
