Classic Savory Fried Rice

Ingredients
- 2 tablespoons vegetable oil
- 3 large eggs, beaten
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup frozen peas and carrots
- 4 cups cooked white rice, preferably chilled
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 4 green onions, sliced
- Salt, to taste
- Black pepper, to taste
Method
- Heat 1 tablespoon of the vegetable oil in a large skillet or wok over medium-high heat.
- Add the beaten eggs and cook, stirring frequently, until fully scrambled. Remove the eggs from the skillet and set aside.
- Add the remaining tablespoon of vegetable oil to the skillet, then add the diced onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 3 minutes.
- Stir in the frozen peas and carrots, cooking until they are heated through, about 3-4 minutes.
- Increase the heat to high and add the cooked rice to the skillet, breaking up any clumps with a spoon. Stir well to combine with the vegetables.
- Return the scrambled eggs to the skillet. Stir in the soy sauce and sesame oil, tossing everything to combine thoroughly.
- Cook for an additional 3-5 minutes, stirring frequently, until everything is heated through and the flavors meld together.
- Remove from heat. Stir in the sliced green onions, then season with salt and black pepper to taste before serving.
