Ingredients

  • 4 bone-in pork chops, about 1 inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon unsalted butter
  • 1 tablespoon fresh thyme, chopped
  • 4 cups mixed vegetables, such as carrots and broccoli, cut into bite-sized pieces

Method

  1. Preheat the oven to 400°F (200°C).
  2. Season the pork chops on both sides with salt, pepper, garlic powder, and paprika.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the pork chops to the skillet and sear for about 3-4 minutes per side, until golden brown.
  5. Add butter and fresh thyme to the skillet, and let the butter melt and bubble slightly.
  6. If using vegetables, push the pork chops to one side of the skillet and add mixed vegetables, tossing them in the butter and seasonings.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  8. Remove the skillet from the oven and let the pork chops rest for 5 minutes before serving with the vegetables.
