Classic Meatloaf with Glaze

Ingredients

  • 2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup almond milk
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ketchup, divided
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Method

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, almond milk, chopped onion, minced garlic, eggs, Worcestershire sauce, Dijon mustard, salt, and black pepper. Mix until just combined.
  3. Transfer the meat mixture to the prepared loaf pan, pressing it down gently to form an even loaf.
  4. In a small bowl, mix 1/2 cup of ketchup, brown sugar, and apple cider vinegar to make the glaze.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for at least 10 minutes before slicing.
