Classic Meatloaf with Glaze
This homestyle meatloaf is rich, comforting, and perfect for a slow summer baking session. It's a familiar dish loved by many, bound to satisfy your cravings.
Ingredients
- 2 pounds ground beef
- 1/2 cup breadcrumbs
- 1/2 cup almond milk
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs, lightly beaten
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ketchup, divided
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Method
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, almond milk, chopped onion, minced garlic, eggs, Worcestershire sauce, Dijon mustard, salt, and black pepper. Mix until just combined.
- Transfer the meat mixture to the prepared loaf pan, pressing it down gently to form an even loaf.
- In a small bowl, mix 1/2 cup of ketchup, brown sugar, and apple cider vinegar to make the glaze.
- Spread the glaze evenly over the top of the meatloaf.
- Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for at least 10 minutes before slicing.
