Classic Loaded Grilled Cheese

Ingredients
- 8 slices thick whole grain bread
- 8 ounces sharp cheddar cheese, grated
- 1 medium red onion, thinly sliced
- 1 large tomato, sliced
- 1 cup baby spinach
- 4 tablespoons unsalted butter, softened
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Preheat a large skillet or griddle over medium heat.
- Spread butter evenly on one side of each bread slice.
- Place 4 slices of bread, buttered side down, on the skillet.
- Evenly distribute the grated cheese over the slices of bread.
- Layer the onion slices, tomato slices, and spinach on top of the cheese.
- Sprinkle with flaky sea salt and black pepper to taste.
- Top each sandwich with the remaining bread slices, buttered side up.
- Cook sandwiches for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
