Classic Loaded Baked Potato

Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 cup cooked bacon, chopped
- 1 cup scallions, chopped
- 1 cup steamed broccoli florets
- 1 cup compliant mayonnaise
- 1/4 cup fresh chives, chopped
- Ground black pepper, to taste
Method
- Preheat your oven to 400°F (200°C).
- Scrub the russet potatoes clean and pat them dry. Pierce each potato several times with a fork.
- Rub each potato with olive oil and sprinkle with sea salt. Place them directly on the oven rack.
- Bake the potatoes for about 60-75 minutes, until they are tender when pierced with a fork.
- While the potatoes are baking, cook the bacon until crispy and chop it into small pieces.
- Prepare the broccoli by steaming the florets until tender, but still bright green.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut a slit lengthwise on each potato and gently push the ends to open them up.
- Spoon a dollop of compliant mayonnaise into each potato, then top with bacon, broccoli, scallions, and fresh chives.
- Season with ground black pepper to taste and serve immediately.
