Classic Loaded Baked Potato

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 cup cooked bacon, chopped
  • 1 cup scallions, chopped
  • 1 cup steamed broccoli florets
  • 1 cup compliant mayonnaise
  • 1/4 cup fresh chives, chopped
  • Ground black pepper, to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes clean and pat them dry. Pierce each potato several times with a fork.
  3. Rub each potato with olive oil and sprinkle with sea salt. Place them directly on the oven rack.
  4. Bake the potatoes for about 60-75 minutes, until they are tender when pierced with a fork.
  5. While the potatoes are baking, cook the bacon until crispy and chop it into small pieces.
  6. Prepare the broccoli by steaming the florets until tender, but still bright green.
  7. Once the potatoes are done, remove them from the oven and let them cool slightly.
  8. Cut a slit lengthwise on each potato and gently push the ends to open them up.
  9. Spoon a dollop of compliant mayonnaise into each potato, then top with bacon, broccoli, scallions, and fresh chives.
  10. Season with ground black pepper to taste and serve immediately.
