Classic Fried Rice

Fried rice is a comforting meal that's perfect for using up leftover ingredients. With its savory flavor and satisfying texture, it's sure to be a family favorite.

Ingredients

  • 3 cups cooked jasmine rice, preferably day-old
  • 2 tablespoons vegetable oil
  • 1 pound chicken breast, diced
  • 3 large eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 4 green onions, sliced
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken breast and cook until fully cooked and golden brown, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Pour in the beaten eggs and scramble until just set. Remove and set aside with the cooked chicken.
  3. Add the garlic to the skillet and cook for 30 seconds until fragrant. Add the thawed peas and carrots, and sauté for 2 minutes until softened.
  4. Stir in the day-old rice, breaking up any clumps with a spatula. Return the chicken and eggs to the skillet, mixing everything together.
  5. Pour in the soy sauce and sesame oil, stirring to combine. Add the sliced green onions and mix well. Season with flaky sea salt and black pepper to taste.
  6. Cook for another 2-3 minutes, stirring frequently, until the rice is heated through and evenly coated with the sauce. Serve hot.
