Classic Fried Rice
Fried rice is a comforting meal that's perfect for using up leftover ingredients. With its savory flavor and satisfying texture, it's sure to be a family favorite.
Ingredients
- 3 cups cooked jasmine rice, preferably day-old
- 2 tablespoons vegetable oil
- 1 pound chicken breast, diced
- 3 large eggs, beaten
- 1 cup frozen peas and carrots, thawed
- 4 green onions, sliced
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken breast and cook until fully cooked and golden brown, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil. Pour in the beaten eggs and scramble until just set. Remove and set aside with the cooked chicken.
- Add the garlic to the skillet and cook for 30 seconds until fragrant. Add the thawed peas and carrots, and sauté for 2 minutes until softened.
- Stir in the day-old rice, breaking up any clumps with a spatula. Return the chicken and eggs to the skillet, mixing everything together.
- Pour in the soy sauce and sesame oil, stirring to combine. Add the sliced green onions and mix well. Season with flaky sea salt and black pepper to taste.
- Cook for another 2-3 minutes, stirring frequently, until the rice is heated through and evenly coated with the sauce. Serve hot.
