Classic Chicken Stir-Fry

Ingredients
- 2 tablespoons olive oil
- 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
- 1 large red bell pepper, sliced
- 1 cup broccoli florets
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 teaspoon ground black pepper
- Flaky sea salt, to taste
Method
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the chicken pieces to the skillet, season with salt and black pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the bell pepper, broccoli, and onion. Stir-fry for about 4 minutes until vegetables are tender but still crisp.
- Add the garlic and stir for an additional minute until fragrant.
- Return the chicken to the skillet and add soy sauce. Stir everything together until well combined and heated through, about 2 minutes.
- Taste and adjust seasoning with flaky sea salt and more black pepper if needed. Serve hot.
