Classic Chicken Stir-Fry

Enjoy a classic chicken stir-fry that's easy to prepare and perfect for a summer meal. This dish combines tender chicken with fresh vegetables for a wholesome dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
  • 1 large red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon ground black pepper
  • Flaky sea salt, to taste

Method

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces to the skillet, season with salt and black pepper, and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil.
  4. Add the bell pepper, broccoli, and onion. Stir-fry for about 4 minutes until vegetables are tender but still crisp.
  5. Add the garlic and stir for an additional minute until fragrant.
  6. Return the chicken to the skillet and add soy sauce. Stir everything together until well combined and heated through, about 2 minutes.
  7. Taste and adjust seasoning with flaky sea salt and more black pepper if needed. Serve hot.
