Classic Chicken Noodle Soup

This classic chicken noodle soup is a comforting dish that's perfect for transitioning from winter to spring. It's full of flavor, easy to make, and will warm you up on a cool evening.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 1/2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Method

  1. In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery, and cook for 5-7 minutes until the vegetables are softened.
  2. Add the garlic and cook for another 1 minute, stirring frequently to prevent burning.
  3. Pour in the chicken broth and bring to a boil. Add the shredded chicken, egg noodles, thyme, and bay leaf.
  4. Reduce the heat to low and simmer for 20 minutes, or until the noodles are cooked through.
  5. Remove the bay leaf and season with salt and pepper to taste. Stir in the fresh parsley just before serving.
