Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon Chinese five-spice powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar, for rolling

Method

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Beat in the egg and molasses until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, ground ginger, Chinese five-spice powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough and roll them into balls.
  7. Roll each ball in the additional sugar to coat, then place them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes or until the edges are set and the tops are slightly cracked.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
