Chicken Teriyaki Salad
This chicken teriyaki salad combines the rich flavors of teriyaki with fresh greens for a satisfying meal. It's perfect for a quick and healthy dinner any day of the week.
Ingredients
- 1 pound boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons mirin
- 1 tablespoon vegetable oil
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/4 cup sliced almonds
- 1 tablespoon sesame seeds, toasted
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- In a bowl, mix the soy sauce, honey, and mirin. Add the chicken thighs and marinate for 10 minutes.
- Heat the vegetable oil in a skillet over medium heat. Remove the chicken from the marinade and cook for 6-8 minutes on each side until cooked through.
- Let the chicken rest for a few minutes, then slice it into strips.
- In a large bowl, combine the mixed greens, cherry tomatoes, sliced almonds, and toasted sesame seeds.
- Top the salad with the sliced chicken and drizzle with any remaining teriyaki sauce from the skillet.
- Season with flaky sea salt and black pepper to taste before serving.
