Chicken Noodle Soup

This chicken noodle soup is the perfect comfort dish, packed with tender chicken, hearty vegetables, and wholesome noodles. It's a familiar classic that brings warmth to your table.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 cups egg noodles
  • 2 tablespoons fresh parsley, chopped

Method

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3 minutes.
  2. Add the carrots and celery, and cook for another 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken breasts and dried thyme. Reduce the heat and simmer until the chicken is cooked through, about 20 minutes.
  5. Remove the chicken from the pot, shred it, and return it to the soup.
  6. Season the soup with salt and pepper to taste.
  7. Stir in the egg noodles and cook for another 10 minutes or until the noodles are tender.
  8. Stir in the fresh parsley just before serving.
