Chicken Noodle Soup
This chicken noodle soup is the perfect comfort dish, packed with tender chicken, hearty vegetables, and wholesome noodles. It's a familiar classic that brings warmth to your table.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 8 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 2 cups egg noodles
- 2 tablespoons fresh parsley, chopped
Method
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3 minutes.
- Add the carrots and celery, and cook for another 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the chicken breasts and dried thyme. Reduce the heat and simmer until the chicken is cooked through, about 20 minutes.
- Remove the chicken from the pot, shred it, and return it to the soup.
- Season the soup with salt and pepper to taste.
- Stir in the egg noodles and cook for another 10 minutes or until the noodles are tender.
- Stir in the fresh parsley just before serving.
