Chicken and Spinach Salad

This hearty main-dish salad brings together tender chicken, fresh spinach, and a flavorful sesame ginger dressing. Perfect for a satisfying and healthy autumn meal.

Ingredients

  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 2 cups cooked chicken breast, sliced
  • 5 ounces baby spinach
  • 1/4 cup sliced almonds, toasted
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, and grated ginger to make the dressing.
  2. In a large bowl, combine the cooked chicken slices and baby spinach.
  3. Drizzle the dressing over the salad and toss to coat evenly.
