Chewy Oatmeal Cookie Bars
These chewy oatmeal cookie bars are easy to make and perfect for a cozy winter dessert. Enjoy them warm from the oven or packed in a lunchbox for a sweet treat.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 cups old-fashioned oats
Method
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan with butter or non-stick cooking spray.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
- Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually blend this into the butter mixture.
- Stir in the oats until just combined. Spread the dough evenly into the prepared pan.
- Bake for 18-20 minutes, or until the edges are golden and the center is set. Do not overbake.
- Allow to cool completely in the pan on a wire rack before cutting into bars.
