Indian · Spring · 60 min · Serves 4 · By Lesapor Test Kitchen

Shrikhand is a traditional Indian dessert made from strained yogurt and is naturally sweetened and flavored with aromatic spices. This small-batch version captures the floral essence of rose and the warmth of cardamom, making it a perfect spring treat. Simple to prepare, it requires minimal ingredients and effort.

Ingredients

  • 2 cups plain whole-milk yogurt
  • 1/2 cup powdered sugar
  • 1 teaspoon ground cardamom
  • 1 tablespoon rose water
  • 1/4 cup sliced almonds, toasted
  • 2 tablespoons dried rose petals, for garnish

Method

  1. Place the yogurt in a clean muslin cloth or a cheesecloth-lined sieve over a bowl. Allow it to drain in the refrigerator for 30 minutes to remove excess whey.
  2. Transfer the strained yogurt to a mixing bowl. Add the powdered sugar, ground cardamom, and rose water. Mix well until smooth and creamy.
  3. Spoon the mixture into four serving cups or bowls. Cover and refrigerate for at least 30 minutes to chill and set.
  4. Before serving, garnish each cup with toasted sliced almonds and sprinkle with dried rose petals.
