Baked Salmon with Vegetables

This baked salmon with vegetables is an easy and healthy dinner option that pairs a flavorful Indian spice blend with succulent salmon and roasted vegetables. A perfect meal for any day of the week.

Ingredients

  • 4 salmon fillets, about 6 oz each
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix olive oil, lemon juice, ground cumin, ground coriander, and turmeric powder.
  3. Place the salmon fillets on the prepared baking sheet and brush them with the spice mixture. Season with salt and pepper.
  4. Spread the broccoli florets and sliced bell pepper around the salmon. Drizzle the vegetables with a bit of olive oil and season with salt and pepper.
  5. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
  6. Remove from the oven and let it rest for a few minutes before serving. Serve the salmon with the roasted vegetables.
