Baked Salmon with Vegetables
This baked salmon with vegetables is an easy and healthy dinner option that pairs a flavorful Indian spice blend with succulent salmon and roasted vegetables. A perfect meal for any day of the week.
Ingredients
- 4 salmon fillets, about 6 oz each
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 2 cups broccoli florets
- 1 bell pepper, sliced
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
Method
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix olive oil, lemon juice, ground cumin, ground coriander, and turmeric powder.
- Place the salmon fillets on the prepared baking sheet and brush them with the spice mixture. Season with salt and pepper.
- Spread the broccoli florets and sliced bell pepper around the salmon. Drizzle the vegetables with a bit of olive oil and season with salt and pepper.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
- Remove from the oven and let it rest for a few minutes before serving. Serve the salmon with the roasted vegetables.
