Baked Salmon with Summer Vegetables
This easy baked salmon recipe is perfect for summer, highlighting the fresh flavors of seasonal vegetables. Quick to prepare, it's ideal for a healthy weeknight dinner.
Ingredients
- 4 salmon fillets, about 6 oz each
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 2 cups cherry tomatoes, halved
- 1 large zucchini, sliced
- 1 tablespoon lemon juice
- Flaky sea salt, to taste
- Ground black pepper, to taste
Method
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper.
- Arrange the cherry tomatoes and zucchini slices around the salmon on the baking sheet. Drizzle with remaining olive oil, lemon juice, salt, and pepper to taste.
- Bake in the preheated oven for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven. Serve the salmon and vegetables warm, garnished with additional lemon juice if desired.
