Ingredients

  • 1 (8-pound) bone-in ham
  • 1 cup brown sugar, packed
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon ground cloves
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat your oven to 325°F (160°C). Place the ham on a rack in a large roasting pan.
  2. In a bowl, mix together the brown sugar, honey, Dijon mustard, apple cider vinegar, and ground cloves until well combined.
  3. Pour the glaze over the ham, making sure it's evenly coated. Use a brush to cover all surfaces with the glaze.
  4. Cover the ham loosely with aluminum foil and place it in the preheated oven.
  5. Bake for about 2 hours, basting the ham with the glaze every 30 minutes.
  6. Remove the foil during the last 30 minutes of baking to allow the glaze to caramelize.
  7. Check the temperature with a meat thermometer. The internal temperature should reach 140°F (60°C).
  8. Once done, remove the ham from the oven and let it rest for 15 minutes before slicing.
  9. Season with sea salt and black pepper to taste. Serve warm.
